beef lasagna~my gorgeous aunt punye recipe~

Beef Lasagna
250 gm instant lasagna
2 tbsp oil
1 onion, finely chopped
1 carrot, finely chopped
1 clove garlic, crushed
500 gm beef mince
2 tbsp tomato paste
2 tomatoes, cut in small cubes
2 tbsp chicken stock
Salt and pepper to taste

2 tbsp butter
2 tbsp plain flour
2 cups fresh milk
125gm mozzarella or cheddar cheese

Meat sauce:

Heat oil in saucepan.Add onion, garlic and carrot,cook till soft. Add beef mince, cook till brown. Stir in tomatoe paste, tomatoes and chicken stock. Season with salt and pepper. Cover and cook gently in 20 mins.

Cheese Sauce:

Melt butter in a saucepan,stir in flour and cook for 2 mins over gentle heat. Remove from heat stir in milk. Return to heat, stir until thick and smooth. Season with salt, pepper and cheese, stirring over low heat until cheese melts

Assembly:

Preheat oven to 180 C. Pour 1/2 cup of meat sauce into lightly greased baking dish. Alternate layers of lasagna, meat sauce and cheese sauce, ending with cheese sauce (allows fo 4 layers). Sprinkle with grated parmesan cheese, bake in oven for 35-45 mins or until cooked. (test if cooked by pricking with a fork). Let stand 5 mins before serving
Hint: For perfect lasagna, make sure that lasagna sheets are completely coverd with meat sauce. Important to retain a high level of moisture.
